So I'm doing this scanning project and I'm scanning thousands of pages, I was wondering what I should expect and some things to avoid.

What is the recommended DPI for black and white text? And some other recommended settings.
What are some expected hurdles?
What are some general things I can do to keep size to a minimum?
Tips on OCR
What are something to avoid?

If anyone can answer any of these, it would be a great help!

I don't have a direct reply, but a suggestion: the answer to many of these questions will depend on the software you have will use for the task.
 
Have you purchased a volume OCR solution, are you looking for a recommendation for some, or are you using software not aimed at the volume conversion? In other words, if you have software, what is it, and if not, I suppose, what is your budget?

I'm using Nuance Pdf Converter 7

It's doing the job well, I guess I'm trying to fine tune my process.

Right now I'm using a Fujitsu Snapscan S1500 scanning in 600 dpi Black and White.

This thing spits out paper like nobody's business!
