Is there a way to view the program code (acrobat) running in the background?

If you are talking about the JavaScript code in forms, then you can use Acrobat Standard or Professional. Professional will provide the best possible tool set.

If the form was created with LiveCycle then you would need to purchase that product.

All the above assumes the files have not been password protected.
